This lemon shortbread is such a delicious and easy one to bake with your children. The zing of the lemon really cuts through the butter making it such a fresh spring treat. Here’s the recipe for you to enjoy.

Ingredients:-

• 4 oz butter

• zest of 1 lemon

• 2 oz caster sugar

• 6 oz plain flour

Method:-

• Preheat the oven to 140 degree C.

• Ensure your butter is softened and at room temperature. Cream the butter and add the lemon zest.

• Mix the caster sugar and flour into the butter mixture using a spatula until it is all well combined and there are no lumps.

• Press your dough flat onto a well floured surface and using Easter cookie cutters press out and place on a tray with baking parchment on.

• Bake for 40 minutes until the dough is dry and is beginning to change colour. As soon as the shortbread comes out of the oven sprinkle it with caster sugar. Allow to cool on a cooling rack and serve with a cup of Earl Grey tea.  So delicious!
