Spiced Christmas Cookies – the perfect advent bake!

These slightly spiced Christmas cookies are a family favourite over advent in our house and they are so much fun to make with the children – particularly when it comes to rolling them into balls or coating in the icing sugar! The delicate spices and buttery richness transports me to a Christmas market covered in snow and gleaming with a festive glow.  I have used ground cinnamon and all spice but you can experiment with different spices such as ginger or cardamo or add some chocolate chips into the mix!

Spiced Christmas Cookies

  • 120g butter
  • 1 cup coconut sugar
  • 1 egg, beaten
  • 1 cup plain flour
  • 1tsp ground cinnamon
  • 1 tsp all spice
  • zest of lemon
  • ¼ vanilla extract
  • ½ tsp baking powder
  • 2 tbsp g cocoa powder
  • 1/2 cup icing sugar, for baking

Line a baking tray with parchment and set aside. Place the butter and sugar in a large mixing bowl and beat together until smooth. Add the remaining ingredients (apart from the icing sugar) and beat together until you have a smooth cookie dough. Scoop the dough, a tablespoon at a time, and roll into little even balls. Place the balls onto the prepared baking tray and into the fridge for 30 minutes – 1 hour. [Note: At this stage you can freeze the dough to bake at a later date.]

To bake:
 preheat your oven to 175oC and remove the dough from the fridge. Place the icing sugar on a large plate and roll each ball in the sugar until lightly coated- this will give the final cookies a lovely chewy texture on the outside. Once coated, remove and place on a baking tray leaving enough room for them to expand slightly- you will need two baking trays if you are cooking the entire batch.

Place the cookies in the preheated oven for 7-10 minutes. They will feel a quite soft and under- baked at this point but trust me- like a good  brownie its vital that you don’t over bake these! Remove and leave on the hot baking sheet for 10 minutes while they cool and continue to finish cooking. Once they have set remove onto a wire rack and enjoy with a mug of hot cocoa!
