Cranberry and Orange Scones — a sugar free breakfast and tea time treat!

These Cranberry and Orange scones are an instant hit! We made them early one morning while on holiday, and the scent of the cranberry and orange baking away in the oven filled our home with happiness. Honestly, it is that warming and delicious of a scent! Great for an Autumn or Winter weekend but just as good year round.

We eliminated sugar so our little one (now 15 months) could enjoy them. The orange juice and zest make it sweet. And we love the tart cranberries with it as well! Here is the simple recipe.

    

Cranberry and Orange Scones

  • 1kg self-raising flour
  • 250g unsalted butter
  • 100g cranberries
  • 3 medium eggs
  • 300ml milk
  • 100ml  fresh squeezed or store bought orange juice
  • zest of one orange
  • sprinkle or two of sea salt
  1. Pre-heat your oven to 150°c and lightly grease your baking sheet.
  2. Place the flour and butter in a mixing bowl and rub together with your fingertips until the mixture resembles fine breadcrumbs.
  3. Add the cranberries, orange zest, and salt.
  4. Beat the eggs and add to the mixture with the orange juice.
  5. Pour in half the milk and stir to combine the wet and dry ingredients.
  6. Add the remaining milk a little at a time until the mixture comes together and forms a dough.
  7. Turn out onto a lightly floured surface and roll out to approximately 4cm deep.
  8. Cut out circles using a 7cm/2¾ inch biscuit cutter and transfer the scones to the baking sheet. We used a glass as we didn’t have a cutter!
  9. Push the remaining dough trimmings together and re-roll until all the dough is used. We made 16 scones — a great recipe to share with friends.
  10. Bake for 15-20 minutes until well risen and golden brown. Remember oven times can vary.
  11. Serve warm with butter (lots in our case) and enjoy!

These store well for several days, are great for road trips or taking on picnics, and are delicious toasted too. Yum!
