Oatmeal Blueberry Cups — a great breakfast and on-the-go snack too!

These Oatmeal Blueberry Cups for breakfast were so yummy I had to share! They are a healthy and yummy breakfast and can be made in advance. (And I always love a new idea to add to our breakfast repertoire!) They are also perfect for lunches, after-school snacks, road trips, and I can imagine would be great for camping too… you get the idea, they travel well. And, they store well.

They are also full of goodness, and are wheat, gluten, sugar, and nut free. The baked oats with the moist bananas and juicy blueberries means it is somewhere in-between a firm muffin and a moist bar. Porridge (or oatmeal!) in a baked cup.

Simple to make, my two-year-old son helped me, and enjoyed every step, including sneaking a few bites.

Oatmeal Blueberry Cups

*they take 5 – 10 minutes to make, 17 minutes to bake, and make 1 dozen servings

Ingredients:

  • 2 cups mashed bananas, (use ones that are soft and covered in brown spots if possible, they are sweeter, and easier to mash. I used 4.5 small bananas but it depends on the size!)
  • 2 cups old-fashioned rolled oats or uncooked oats
  • a pinch of salt
  • 2 eggs, beaten
  • 2 teaspoons baking powder
  • 1 cup fresh blueberries
  • 2 teaspoons vanilla extract
  • cinnamon to taste
  • optional, sunflower or pumpkin seeds (we used both)
  • butter for greasing pan

Steps:

  1. Preheat the oven to 220 degrees C or, 425 degrees F
  2. Use large muffin tin, and generously grease the cups with butter.
  3. Mash the bananas with a fork until smooth
  4. Add banana, oats, salt, beaten egg, baking powder, vanilla, cinnamon and seeds if using them, to a bowl
  5. Stir until just combined
  6. Stir in blueberries
  7. Fill muffin cups very close to the top, they do not rise like muffins do.
  8. Bake them for 5 minutes at the high heat of 220 degrees C (425 degrees F). Then, turn the heat down to 190 degrees C (375 degrees F) and bake them for 12 more minutes.
  9. Let the muffins cool for 5 minutes before removing them, or they will break apart since they are so moist.
  10. Store in a lidded container, if you don’t eat all of them in one sitting!

Other simple breakfasts that we simply love in our family are: banana pancakes, rice pudding, homemade granola, and even these coconut oat date balls.

I’m going to try them tomorrow (for my 20 month old son!) I imagine frozen blueberries should work fine too?
